Tamara Koopman - Vlindervrij

Last Sunday was the SuperBowl; the National Football League finale. This was the first time ever that we actually saw bits of it on television. I went for groceries just before it started and there was almost no one on the road or in the store. I don’t know the game rules (yet) or the size of this superbowl as a non-native American, but it is HUGE! It’s like the World Championship Soccer in The Netherlands/Europe. Only then everyone is in orange, the Dutch color, and all bars are full with people watching the game while drinking beer and eating Dutch snacks, like ‘bitterballen’. To all Americans, I would love to hear what your SuperBowl traditions are!

During this SuperBowl I made my own SuperBowl! It is hearty, healthy and sweet, and all of that in just one bowl; the perfect meal for a Sunday night during SuperBowl or World Championships soccer, when the Dutch team plays again that is ;).

SuperBowl Recipe

Ingredients for at least 4 persons;

  • Yellow SuperSauce:
  • • 1 cup (raw) cashews
  • • 1/2 cup nutritional yeast
  • • 2 tablespoons olive oil
  • • 2 tablespoons sesame oil
  • • juice of 1 small lemon
  • • 3 cloves garlic
  • • 1 tablespoon yellow mustard
  • • 1 tablespoon garlic powder
  • • 1 tablespoon onion powder
  • • 1 tablespoon turmeric
  • • 2 teaspoons Himalayan salt
  • • 1 teaspoon curry powder
  • • 1 teaspoon cumin
  • • 1/4 cup of water or more

  • Yellow SuperSauce:
  • 1) Put all ingredients in a blender and blend till smooth. If needed add more water. Put the sauce into a beautiful bowl or mason jar. Yay! Good job, as this is the most important part of your SuperBowl!

  • Now, the rest of the ingredients of the bowl to serve the sauce with :)
  • • Cooked Rice
  • • Cooked Black Beans
  • • Kalamata Olives (YUM!) and/or olive tapenade
  • • Bruschetta sauce (raw tomato sauce with all kinds of deliciousness in it)
  • • Avocado, sliced
  • • Pickles and/or Kimchi
  • • and Cilantro, or Coriander for my European readers :)

...and now make it look gorgeous!

Serve and eat with a smile :)
